Chiara Innocenti & Francesca di Benedetto are not just making pure & traditional Tuscan wines, but since 2010, they've been extracting some of the purest extra virgin olive oil from their 600 olive trees.Harvested by hand, without no mechanical equipment used, and taken to the mill every evening after harvesting.The cold pressing, carried out in a modern plant in a continuous cycle, enables to obtain an oil with very low acidity and level of peroxides (average acidity of 0.2% and n° of peroxides of 2.5 meq O2 / kg) which maintains its organoleptic characteristics unchanged for a long time.
The result is a very spicy, full body & aromatic oil with pungent green olive notes...
